The appellation « Crémant de Bourgogne » is reserved to sparkling wines made of easy wines, prepared according to the traditional method.
The « Crémant Blanc de Blanc » is solely made of Chardonnay varietal.
Making of: The drawing off and the froth removal: Once approved by the National Institute of the Origin and the Quality (INAO), the cuvée obtained from the best blends will be bottled, after addition of sugar and yeast in order to reproduce an in-bottle fermentation: this is called the froth removal and the aging. The bottles are then stored in slats during a minimum time of 9 months.
The stirring: This is the operation that consists of turning the bottles on the rack of a quarter of a turn. This maneuver brings, through gravity, the deposit onto the cap. It takes a month to obtain a clear bottle.
The dégorgement and the dosage: This process eliminates the deposit stocked in the bottle neck. The addition of expedition liqueur will finally give, depending on the dosage, the « Crémant » cuvée. It is a tasting organized by the INAO that will allow its trade in order to obtain the appellation « Crémant de Bourgogne ».
The Maison Mugnier’s Crémant de Bourgogne Blanc de Blanc offered to sparkling wine connoisseurs, can be enjoyed amongst friends or for a special occasion, it is up to you.
